What a crazy week we have had here! Our chicks arrived Monday and they are growing sooo fast. They are also learning how to use their wings. I found one on top of the water jar this morning, one more flutter and she would have been out of the box. That is of course my biggest fear, to count 12 and not 13. So 18?? If you take the 13 female chicks and the 5 females living in our house, (me and the four girls) the poor Chipster is now seriously out numbered. They are a bit messy and I had to recently upgrade their cardboard condo.

Wow, poor Chip! He has been outside all day (12 hours) collecting wood for the fire under the syrup, boiling the sap, collecting the sap, boiling more sap, collecting more wood.... Then came the rain. See we don't have a traditional sugar shack or sugar house, we have an outdoor fireplace and it is not covered. Three out of our four girls strapped on their rainboots and raincoats and ran outside to help. The winds came and we panicked as each girl pulled the buckets from the hooks and brought them to the basement. We have painstaking collected these 24 foodgrade 2.5 gallon buckets over the last 2 years and I was in no mood to start chasing them across the neighbors property. Then Chip grabbed...

It's been an interesting couple of months here on the "farm". Maple syrup season is well under way and we have baby chicks scheduled to arrive on the 20th of February. We have had a very mild winter which in maple syrup terms means we have a whole lot more boiling to do. Last year the cold winter blessed us with a ratio of 30:1, which meant for each gallon of syrup we produced we had boiled 30 gallons of sap. This year is looking to be more like 50-60:1, which yah, you do the math. Ick! But we are ready and have an extra 15 taps in the bush so we now have 25 trees tapped as compared to last years 10.
